When cooking at home, do you ever feel that your dishes lack that little something? That indefinable flavour that just gives things that wow factor?
I've been experimenting with a number of herbs and spices lately, and even in my scrambled eggs in the mornings i'll be adding tumeric, cumin and paprika just to see what happens.
One special ingredient I've spotted while out and about lately however is 'umami'. It's the famous 'fifth taste', a concept which originated in Japan which translates roughly as 'savoury deliciousness'. I've recently seen powder, sprinkles and sauces which promise to infuse your dishes with new-found wonders of flavour.
A brand I've tried in the past, Clearspring, who have delicious organic miso soups and seaweed mixes, have now released an Umami Paste. Available in Ginger and Chilli varieties, this paste promises to lift and bring out the full-flavours of any recipes you add it to.
This paste is incredibly versatile and I've used it for everything from salad dressing (mixed with olive oil and lemon juice), to stir fry sauces, and even straight in water as a simple soup.
Made in the traditional manner of adding a 'Koji' culture to rice and leaving it to naturally ferment, the paste is mixed with soya sauce and either fresh ginger or fresh chilli to create a tasty and moreish kitchen essential.
High in protein, fat-free and vegan, the paste has no added sugar, so is a healthy and delicious way to upgrade any meal with the elusive 'fifth flavour'.
